Roe & Co. Whiskey Distillery has announced the return of its Summer Garden Experience, featuring four exciting restaurants from around the country.
The experience runs from June to September, with each restaurant devising a tasting menu for its month-long residency.
Skilled bar staff at the Roe & Co. whiskey distillery, in the Liberties, will create custom-crafted whiskey cocktails to go with each menu.
The restaurants featured this summer are El Milagro, Street By Sunil, the Salt Project and Socafro Kitchen.
Expect plenty of rich and diverse flavours, as each takeover represents a different cuisine, from Mexican to Indian and Irish to Afro-Caribbean.
‘Authentic Flavours’
Friday 7 June marks the first day of the pop-up.
El Milagro’s authentic Mexican dishes will be available in the distillery until 29 June.
Julian Trejo Pascual and his mother, Maribel, from Mexico City, combine traditional Mexican cooking, tortillas from Creole corn, and the best Irish ingredients, for an exciting culinary experience.
Pascual said, “This menu is inspired by the authentic flavours we grew up with in Mexico, while adding a little of our own twist and creations.”
Street By Sunil
Street By Sunil will be taking over the Summer Garden Experience on 4 July and remain in residence until 27 July.
Headed by multi-award-winning chef Sunil Ghai of Pickle restaurant and his wife, Leena, the dishes will focus on traditional recipes from their childhoods in India.
Ghai said of the restaurant, “I always wanted to open something small for family gatherings, where people can get together with their nearest and dearest and have fun while the team at Street look after them like a family at home.”
‘Developed Through The Centuries’
The Salt Project, founded by Kildare-based chef Caomhán de Brí, will be taking up residence from 1 to 24 August.
Visitors to this pop-up can expect an offering that consists of a series of blaisíní (small bites) dishes.
The chef has specially designed each of the blaisíní to showcase locally grown and artisanal ingredients from small-scale producers.
Speaking about his menu, de Brí said, “The dining experience in collaboration with Roe & Co. has been created and inspired by the deep history of our wonderful capital city and how our food-and-drink culture has developed through the centuries.”
Finally, from 29 August to 21 September, Afro-Caribbean Waterford restaurant Socafro Kitchen will enjoy its residency.
Chef Alistair Jeje offers an enticing fusion of Caribbean and Nigerian flavours, from mouth-watering jerk chicken to savoury jollof rice.
Alistair joins Roe & Co. ahead of the launch of his debut cookbook, Socafro.

The Roe & Co Distillery Summer Garden is an over-18s experience. Tasting menus are €45pp, and the cocktail-pairing menu is €35pp.
