Bord Bia is calling on the nation to celebrate its favourite vegetable – the potato – on National Potato Day, today, Friday 4 October.
The root vegetable is renowned for its taste, versatility and nutritional profile, and new Bord Bia recipes aim to help the public make the most of the event.
These include a focus on traditional potato dishes prepared in a modern way, by encouraging people to use the air fryer and tasty ingredient combinations that are sure to impress friends and family.

Bord Bia has once again teamed up with the king and queen of air fryer cooking in Ireland – Karol and Gina Daly.
Last week, the duo spent time in the Boxty House restaurant in Temple Bar, Dublin, under the expert guidance of owner and chef Pádraic Óg Gallagher, to learn how to cook classic potato recipes using an air fryer.
The excursion also served to shine a light on traditional potato recipes that have stood the test of time.

Potatoes are a natural carbohydrate that is both fat- and gluten-free, packed with fibre (even more so with the skin on) and Vitamin C.

Potatoes work well with a variety of ingredients, making them the perfect base for any cuisine, especially traditional Irish cooking.
To celebrate National Potato Day in style this year, Bord Bia has chosen a selection of traditional Irish potato recipes that are perfect for any meal occasion.
The recipes include Irish garlic potato farls, spinach rösti with roast tomatoes, and potato pancakes with smashed avocado and smoked salmon.
The recipes can be made using leftover mashed potato, to reduce cooking time, and are suitable to modify with many kitchen ingredients.
Speaking about the day, Bord Bia potato and fresh-produce sector manager Lorcan Bourke said, “This year’s National Potato Day campaign aims to encourage home cooks to revisit the traditional potato recipes, but with a modern twist.
“The air fryer and other methods of convenient cooking have made preparing these much-loved dishes even simpler.
“Potatoes remain one of the best value-for-money ingredients and the starting point for many tasty, balanced meals.”
